- 1 cup (240g) whole milk ricotta cheese
- 3 tablespoons (60ml) raw, local honey
- ½ cup (70g) shelled and roughly chopped pistachios
- 1 teaspoon lemon zest
- ½ teaspoon vanilla extract
- Pinch of sea salt
- Optional garnishes: fresh mint leaves, edible flowers, sprinkle of cinnamon
Instructions
- Toast the pistachios in a dry skillet over medium heat, stirring frequently, until golden and fragrant, about 3-4 minutes. Remove from heat and let cool.
- In a mixing bowl, combine ricotta, honey, vanilla extract, lemon zest, and sea salt. Stir gently until smooth and creamy.
- Reserve a small handful of pistachios for garnish, then fold the rest into the ricotta mixture evenly.
- Using a small cookie scoop or spoon, dollop the ricotta mixture onto a parchment-lined baking sheet or plate in bite-sized mounds (about 1 tablespoon each). Press reserved pistachios on top if desired.
- Chill the bites in the refrigerator for at least 30 minutes to firm up and meld flavors.
- Before serving, drizzle extra honey over the bites and add any optional garnishes like mint leaves or edible flowers.
