- 2 boneless, skinless chicken breasts, cut into bite-size pieces
- 1 package cheese tortellini (fresh or frozen)
- 1 cup heavy cream
- 1 cup freshly grated Parmesan cheese
- 1/2 cup sun-dried tomatoes, packed in oil
- 1 cup chicken broth
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 3 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Season chicken pieces with salt, pepper, and a pinch of Italian seasoning. Cook for 5-7 minutes until golden brown and cooked through. Remove chicken and set aside.
- In the same skillet, add another tablespoon of olive oil and minced garlic. Cook for 30 seconds until fragrant, being careful not to burn.
- Stir in sun-dried tomatoes, chicken broth, heavy cream, and remaining Italian seasoning. Bring to a gentle simmer and cook for 5 minutes, stirring occasionally.
- Add tortellini directly into the sauce and stir to coat. Cover skillet and let simmer for 8-10 minutes, or until tortellini is tender.
- Stir in grated Parmesan cheese until sauce is thick and creamy. Add cooked chicken back into skillet and toss to combine. Heat through for 2-3 minutes.
- Serve warm, garnished with extra Parmesan and fresh basil if desired.
