  • 8 oz full-fat cream cheese, softened and cubed
  • 1 cup shredded sharp cheddar cheese (about 4 oz)
  • 6 slices bacon, cooked and crumbled
  • 1 packet ranch seasoning mix or 2 tbsp homemade ranch seasoning
  • 1 tsp garlic powder
  • Salt and pepper, to taste
  • Optional: sliced green onions or jalapeños for garnish

Instructions

  1. Cook bacon in a skillet over medium heat until crispy. Drain on paper towels and crumble once cool.
  2. Place chicken thighs in a mixing bowl. Sprinkle ranch seasoning, garlic powder, salt, and pepper over the chicken. Toss gently to coat evenly.
  3. Add softened cream cheese cubes to the bowl and mix just enough to combine.
  4. Transfer the chicken and cream cheese mixture into the slow cooker. Spread evenly.
  5. Sprinkle shredded cheddar cheese and crumbled bacon on top.
  6. Cover and cook on low for about 4 hours until chicken is tender and cheese is melted. Alternatively, cook on high for 2-3 hours.
  7. Stir gently before serving to combine the cheesy sauce with chicken and bacon.
  8. Garnish with sliced green onions or jalapeños if desired.

Soften cream cheese before mixing to avoid lumps. Cook bacon separately for maximum crispiness. Resist lifting the slow cooker lid during cooking to maintain temperature.
