A quick, creamy, and flavorful Cajun potato soup ready in 30 minutes, perfect for chilly evenings and busy weeknights.
Ingredients
- 4 medium russet potatoes (about 2 pounds / 900g), peeled and diced
- 2 tablespoons olive oil (30ml)
- 1 large yellow onion (about 250g), diced
- 4 cloves garlic (about 1 tablespoon), minced
- 2 tablespoons Cajun seasoning
- 4 cups low-sodium chicken broth (960ml)
- 1 cup heavy cream (240ml)
- 1 medium green bell pepper (about 120g), diced
- 2 celery stalks (about 100g), diced
- Salt and black pepper to taste
- Fresh parsley (optional, for garnish)
Instructions
- Peel and dice the potatoes into roughly 1-inch cubes. Dice the onion, bell pepper, and celery. Mince the garlic.
- Heat olive oil in a large pot over medium heat. Add diced onion, bell pepper, and celery. Cook, stirring occasionally, until veggies soften and onion is translucent, about 4-5 minutes.
- Add minced garlic and Cajun seasoning. Stir constantly for 1 minute until fragrant.
- Add diced potatoes and chicken broth. Stir well and bring to a simmer. Cook uncovered until potatoes are fork-tender, about 10 minutes.
- Optional: Use an immersion blender to puree about half the soup for a smoother texture, or mash some potatoes with a fork for thickness.
- Stir in heavy cream and simmer gently for another 3 minutes.
- Taste and adjust salt, pepper, and Cajun seasoning as desired.
- Ladle soup into bowls and garnish with fresh parsley if desired. Serve hot.
