Ingredients

  • 2 cups diced ham
  • 4 medium potatoes, peeled and chopped
  • 1 medium onion, diced
  • 2 medium carrots, diced (optional)
  • 2 stalks celery, chopped (optional)
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 4 tbsp unsalted butter
  • 1/4 cup flour
  • 1 cup shredded cheddar cheese (optional)
  • Salt and pepper to taste

Instructions

  1. Heat the butter in a large pot over medium heat. Add the diced onion, carrots, and celery. Cook until softened and fragrant, stirring occasionally (about 5 minutes).
  2. Sprinkle the flour over the veggies and stir well. Cook for 1 minute to avoid a raw taste.
  3. Slowly pour in the chicken broth while whisking to break up the flour. Add the chopped potatoes and bring to a simmer. Cover and cook until the potatoes are tender (about 15 minutes).
  4. Stir in the diced ham and simmer for a few more minutes to warm it through.
  5. Reduce the heat to low and stir in the heavy cream. If adding cheese, stir it in now until melted.
  6. Taste and adjust salt and pepper as needed. Ladle into bowls and serve.

Notes

For extra flavor, simmer a ham bone with the broth before starting the recipe. If the soup is too thick, add a splash of broth or water to loosen it up. Leftovers taste even better the next day.
