Description
This Creamy Garlic Parmesan Chicken Pasta is rich, comforting, and super easy to make, perfect for a busy weeknight dinner.
Ingredients
Scale
- 2 boneless, skinless chicken breasts
- 8 ounces fettuccine pasta (or penne/spaghetti)
- 3 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 1/2 cups low-sodium chicken broth
- 1 cup heavy cream
- 1 cup freshly grated Parmesan cheese
- Salt and pepper, to taste
- Chopped parsley (optional)
Instructions
- Bring a large pot of salted water to a boil and cook pasta according to package instructions. Reserve 1 cup of pasta water before draining.
- Heat 2 tablespoons of butter in a large skillet over medium-high heat. Season chicken breasts with salt and pepper, then cook for 4-5 minutes per side until golden brown and cooked through. Remove chicken and let it rest. Slice into strips once cooled.
- Reduce heat to medium and add 1 tablespoon of butter to the skillet. Add minced garlic and sauté for 1 minute, stirring constantly.
- Pour in chicken broth, scraping the bottom of the skillet to deglaze. Add heavy cream and whisk until smooth. Gradually stir in Parmesan cheese until the sauce is creamy and thick.
- Add cooked pasta to the skillet along with 1/2 cup of reserved pasta water. Toss until pasta is fully coated. Add sliced chicken and stir to combine.
- Sprinkle with chopped parsley and extra Parmesan cheese. Serve immediately.
Notes
[‘Use fresh garlic for maximum flavor.’, ‘Reserve pasta water to help the sauce cling to the pasta.’, ‘Grate Parmesan cheese yourself for a smoother sauce.’, ‘Warm heavy cream before adding to prevent curdling.’]
