Ingredients
- 1 pound large shrimp, peeled and deveined
- 2 pounds Russet or Yukon Gold potatoes, peeled and cubed
- 6 tablespoons unsalted butter
- 4 cloves fresh garlic, minced
- 3/4 cup heavy cream
- 1/4 cup whole milk
- Salt and black pepper, to taste
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon lemon juice
Instructions
- Place peeled and cubed potatoes in a large pot and cover with cold water. Add a pinch of salt. Bring to a boil over high heat, then reduce to medium and simmer until potatoes are fork-tender, about 15-20 minutes. Drain well in a colander.
- Return the drained potatoes to the pot or a large bowl. Add 4 tablespoons of butter, heavy cream, whole milk, and a good pinch of salt and pepper. Mash with a potato masher or hand mixer until smooth and creamy. Taste and adjust seasoning. Keep warm.
- While potatoes are boiling, heat a large skillet over medium heat. Add 2 tablespoons butter. Once melted and bubbling, add minced garlic and sauté until fragrant, about 30 seconds, being careful not to burn.
- Add shrimp in a single layer to the skillet. Season with salt and pepper. Cook shrimp for 2-3 minutes per side or until pink and opaque.
- Squeeze fresh lemon juice over the shrimp and sprinkle chopped parsley. Stir to combine and turn off heat.
- Spoon a generous mound of mashed potatoes onto plates and top with garlic butter shrimp. Drizzle any remaining garlic butter sauce from the skillet over the top. Garnish with more parsley if desired.
