A healthy, low carb, and creamy chicken chili made effortlessly in a crockpot. Packed with bold flavors and perfect for busy weeknights.
Ingredients
- 2 pounds boneless, skinless chicken breasts
- 1 can (14.5 oz) diced tomatoes
- 1 can (4 oz) green chilies
- 1 cup chicken broth (low sodium)
- 4 oz cream cheese, softened
- ½ cup sour cream
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 tablespoon chipotle chili powder
- 1 teaspoon cumin
- 1 teaspoon oregano
- Salt and pepper to taste
- Fresh cilantro (optional, for garnish)
Instructions
- Dice the onion and mince the garlic. Open the cans of diced tomatoes and green chilies. Soften the cream cheese by leaving it out for 15 minutes or microwaving for 20 seconds if short on time.
- Place the chicken breasts at the bottom of the crockpot. Pour in the diced tomatoes, green chilies, and chicken broth. Add the diced onion and minced garlic. Sprinkle chipotle chili powder, cumin, oregano, salt, and pepper evenly over the top.
- Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours until the chicken is tender and easy to shred.
- Remove the chicken breasts carefully and shred them using two forks. Return the shredded chicken to the crockpot and stir well.
- Stir in the softened cream cheese and sour cream until fully melted and combined. Taste and adjust salt and pepper if needed.
- Ladle the chili into bowls and garnish with fresh cilantro if desired. Optionally, add a dollop of sour cream or shredded cheese on top.
Notes
Always soften cream cheese before adding to avoid lumps. Use low sodium broth to control saltiness. Shred chicken after it cools slightly to avoid stringy texture. Add extra veggies like bell peppers or zucchini at the start if desired. Adjust chipotle chili powder to taste. If chili is too thick, add a splash of broth or water. Leftovers taste better the next day. Avoid freezing due to dairy separation.
