  • 1 cup granulated sugar
  • 3 large eggs
  • 1 cup heavy cream
  • 1 cup strong brewed coffee
  • 1 ½ cups crushed graham crackers
  • ¼ cup sugar (for crust)
  • ½ cup melted butter (for crust)
  • 1 teaspoon vanilla extract (optional)

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a medium bowl, combine 1 ½ cups of crushed graham crackers, ¼ cup of sugar, and ½ cup of melted butter. Mix until it resembles wet sand. Press this mixture evenly into the bottom of your springform pan. Bake for 10 minutes, then let it cool.
  3. In a large mixing bowl, blend 24 oz (680g) of softened cream cheese and 1 cup of sugar until smooth. This should take about 2-3 minutes. Scrape down the sides of the bowl occasionally to ensure even mixing.
  4. Add 3 large eggs, one at a time, mixing well after each addition. Make sure not to overmix, as this can introduce too much air and cause cracks.
  5. Mix in 1 cup of strong brewed coffee and 1 cup of heavy cream until fully combined. You can add a teaspoon of vanilla extract for an extra flavor boost.
  6. Wrap the bottom of the springform pan with aluminum foil to prevent leaks. Place the springform pan in a larger roasting pan. Pour hot water into the roasting pan until it reaches halfway up the sides of the springform pan.
  7. Carefully place the pan in the oven and bake for 60-70 minutes, or until the edges are set but the center is still slightly jiggly. Turn off the oven and crack the door, letting the cheesecake cool slowly for about an hour.
  8. Remove the cheesecake from the water bath and refrigerate for at least 4 hours, preferably overnight.
  9. Once chilled, carefully remove the cheesecake from the springform pan. You can top it with whipped cream or chocolate shavings for a decadent finish.
