Ingredients

  • 4 medium boneless, skinless chicken breasts
  • 4 cups fresh baby spinach
  • 2 cups sliced baby bella mushrooms
  • 1 cup heavy cream
  • 4 oz cream cheese, softened and cubed
  • 4 cloves garlic, minced
  • ½ cup freshly grated Parmesan cheese
  • 2 tbsp olive oil
  • Salt
  • Pepper
  • Paprika
  • Onion powder
  • Italian seasoning

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Pat the chicken breasts dry and season generously with salt, pepper, paprika, and onion powder.
  3. Heat olive oil in a large skillet over medium-high heat and sear the chicken for 2-3 minutes per side until golden. Remove chicken and set aside.
  4. Add sliced mushrooms to the skillet and sauté for 3-4 minutes until softened. Sprinkle with a pinch of salt and pepper.
  5. Reduce heat to low and stir in minced garlic, heavy cream, cream cheese, and Parmesan cheese. Whisk until smooth and bubbly. Add a splash of chicken broth or water if the sauce is too thick.
  6. Place the chicken breasts back into the skillet or transfer to a baking dish. Top with fresh spinach and pour the creamy mushroom sauce over everything.
  7. Cover the dish with aluminum foil and bake for 20 minutes. Uncover and bake for an additional 10-15 minutes until the chicken is cooked through (internal temperature should reach 165°F/74°C).
  8. Optional: Sprinkle extra Parmesan on top and broil for 2-3 minutes for a golden, bubbly finish.
  9. Serve hot and enjoy!
