Description

This creamy chicken casserole is the ultimate comfort food, featuring a rich, velvety sauce with tender chicken and veggies, topped with flaky, buttery Cheddar Bay biscuits.


Ingredients

  • 3 cups cooked chicken, shredded or diced
  • 2 cups frozen mixed vegetables (peas, carrots, green beans, and corn)
  • 1 can (10.5 oz) cream of chicken soup
  • 1/2 cup sour cream
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • 1 package (11 oz) Cheddar Bay biscuit mix
  • 1/2 cup shredded cheddar cheese
  • 4 tbsp butter, melted

Instructions

  1. Preheat your oven to 375°F (190°C). Grease your 9×13-inch baking dish with cooking spray or butter.
  2. In a large mixing bowl, combine the cooked chicken, frozen vegetables, cream of chicken soup, sour cream, garlic powder, salt, and pepper. Stir until everything is evenly mixed. Spread this mixture into your prepared baking dish.
  3. In another bowl, mix the biscuit mix with the shredded cheddar cheese and the amount of water called for on the package instructions. Stir until just combined—don’t overmix! Drop spoonfuls of the biscuit dough evenly over the top of the filling.
  4. Place the casserole in the oven and bake for 25-30 minutes, or until the biscuits are golden brown and the filling is bubbling around the edges.
  5. Once the casserole is out of the oven, mix the seasoning packet from the biscuit mix with melted butter. Brush this over the hot biscuits for that signature Cheddar Bay flavor.
  6. Let the casserole rest for 5 minutes before serving.
