Ingredients

  • 3 cups (~450g) broccoli, chopped
  • 2 cups (~200g) sharp cheddar cheese, shredded
  • 4 cups (~1 liter) chicken or vegetable broth
  • 1 cup (~240ml) heavy cream
  • 2 tbsp (~30g) butter
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 tbsp (~15g) flour
  • Salt & pepper to taste

Instructions

  1. Melt butter in a large pot over medium heat. Add diced onions and cook until softened, about 3 minutes. Add garlic and cook for another minute, stirring constantly.
  2. Stir in the flour and whisk continuously for about 1 minute until it forms a paste and smells slightly nutty.
  3. Slowly pour in the broth while whisking to avoid lumps. Bring the mixture to a simmer, then stir in the heavy cream. Let it bubble gently for 5 minutes.
  4. Add the chopped broccoli and let it cook until tender, about 8-10 minutes.
  5. Reduce the heat to low and slowly stir in the shredded cheddar cheese until completely melted and the soup is creamy.
  6. Optional: Blend the soup using an immersion blender or regular blender for a smoother texture.
  7. Taste and adjust salt and pepper as needed. Serve warm.
