- 1 lb elbow macaroni
- 6 tbsp unsalted butter
- 1/4 cup all-purpose flour
- 3 cups whole milk
- 1 cup heavy cream
- 3 cups shredded sharp cheddar cheese
- 1 cup shredded Gruyere cheese
- 1 tsp salt
- 1/2 tsp pepper
- Pinch of paprika
- Pinch of garlic powder
- 1 cup panko breadcrumbs
- 2 tbsp melted butter
Instructions
- Boil a large pot of salted water and cook the macaroni until al dente (about 7-8 minutes). Drain and set aside.
- In a medium saucepan, melt 6 tbsp butter over medium heat. Add the flour, whisking constantly for 1-2 minutes until smooth and bubbly.
- Gradually add the milk and heavy cream, whisking continuously to avoid lumps. Cook for 5-7 minutes until the mixture thickens slightly.
- Reduce heat to low and stir in the cheddar and Gruyere cheese a handful at a time. Add salt, pepper, paprika, and garlic powder. Stir until the cheese is fully melted and the sauce is smooth.
- Pour the cheese sauce over the cooked macaroni and stir until evenly coated.
- In a small bowl, mix the panko breadcrumbs with 2 tbsp melted butter.
- Pour the mac and cheese mixture into a greased 9×13-inch baking dish. Sprinkle the breadcrumb mixture evenly over the top. Bake at 375°F (190°C) for 25-30 minutes, or until the top is golden and crispy.
- Let the mac and cheese rest for 5 minutes before serving.
