Creamy Avocado Grilled Cheese

Description

A quick, healthy twist on classic grilled cheese featuring creamy mashed avocado, melty cheese, and crispy sourdough bread. Perfect for a satisfying and nutritious sandwich in under 15 minutes.


Ingredients

  • 2 slices of sourdough or whole grain bread
  • 1 ripe avocado
  • 23 slices of melty cheese (sharp cheddar or pepper jack recommended)
  • 1 tablespoon butter or olive oil
  • 1 teaspoon lemon juice
  • Salt and pepper to taste
  • Optional extras: sliced tomato, fresh spinach or arugula, red pepper flakes, hot sauce

Instructions

  1. Slice bread if not pre-sliced. Cut avocado in half, remove pit, scoop into a bowl. Add lemon juice, salt, and pepper, then mash with a fork until creamy but slightly chunky. Set aside.
  2. Spread mashed avocado evenly on one side of each bread slice. Layer cheese slices on one slice, add any optional extras if desired. Top with the other bread slice, avocado side down, to form a sandwich.
  3. Heat skillet over medium heat. Spread a thin layer of butter or drizzle olive oil on the outside of each bread slice.
  4. Place sandwich in skillet. Cook about 3-4 minutes per side, pressing gently with a spatula, until bread is golden brown and cheese is melted. If bread browns too quickly, lower heat and cover pan for 1-2 minutes.
  5. Remove sandwich, let cool for a minute, then slice and serve warm.

Notes

Use lemon juice in the avocado to prevent browning. Butter the outside of the bread, not the pan, for easier flipping and crispy crust. Keep heat moderate and cover pan if cheese melts slowly. Room temperature avocado and cheese spread better. For extra crispy edges, finish sandwich in a 375°F oven for 3 minutes after pan frying.
