- 3 cups cooked chicken (rotisserie, grilled, or baked)
- 2 cups cooked white rice (Jasmine or Basmati preferred)
- 8 ounces cream cheese, softened
- 1 ½ cups chicken broth (low-sodium optional)
- 1 packet angel hair pasta sauce mix
- 1 teaspoon garlic powder
- 2 tablespoons butter
- Optional mix-ins: frozen peas, shredded cheese, sautéed mushrooms
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9×13-inch casserole dish with butter or cooking spray.
- In a large bowl, mix the cooked chicken and rice together. Spread this mixture evenly in the casserole dish.
- In a saucepan, melt the butter over medium heat. Whisk in the cream cheese, chicken broth, angel hair pasta sauce mix, and garlic powder. Stir until smooth and creamy, about 5 minutes.
- Pour the creamy sauce over the chicken and rice mixture. Use a spatula to spread it evenly.
- Cover the dish with foil and bake for 25 minutes. Remove the foil and bake for another 10-15 minutes, until the top is golden and bubbly.
- Let the casserole cool for 5 minutes before serving. Sprinkle with parsley for garnish, if desired.
