- 16 oz (450g) full-fat cream cheese, softened
- 1 cup (240ml) heavy cream
- 3/4 cup (90g) powdered sugar
- 1 teaspoon vanilla extract
- 1 1/2 cups (150g) graham cracker crumbs
- 6 tablespoons (85g) unsalted butter, melted
Instructions
- Prepare the crust: Melt 6 tablespoons (85g) of unsalted butter and pour it over 1 1/2 cups (150g) of graham cracker crumbs in a bowl. Stir until all crumbs are coated and feel like wet sand. Press this mixture firmly into the bottom of a 9-inch (23cm) springform pan. Use the bottom of a glass to pack it down evenly. Refrigerate while making the filling.
- Whip the cream: In a chilled bowl, whip 1 cup (240ml) of heavy cream with an electric mixer until soft peaks form. Set aside.
- Mix the cream cheese and sugar: In another large bowl, beat the softened cream cheese with 3/4 cup (90g) powdered sugar and 1 teaspoon vanilla extract until smooth and creamy, about 3 minutes on medium speed.
- Fold in the whipped cream: Gently fold the whipped cream into the cream cheese mixture with a spatula, using a light hand to keep the mixture fluffy.
- Assemble and chill: Pour the filling over the chilled crust and smooth the top with a spatula. Cover with plastic wrap and refrigerate for at least 4 hours, ideally overnight, to let the cheesecake set.
Notes
Use full-fat cream cheese softened at room temperature for best texture. Whip heavy cream to soft peaks only. Toast graham cracker crumbs lightly in a dry pan before mixing with butter for extra flavor. Chill cheesecake at least 4 hours or overnight for best results. Use a serrated knife warmed under hot water for clean slices.
