Description
A hearty and comforting lasagna soup with rich tomato sauce, gooey cheese, and tender pasta, all made in one pot in under an hour.

- 1 lb ground beef or Italian sausage
- 1 medium onion, diced
- 4 cloves garlic, minced
- 28 oz crushed tomatoes
- 4 cups chicken or beef broth
- 8–10 lasagna noodles, broken into pieces
- 1 tbsp Italian seasoning
- Salt and pepper to taste
- 1 cup ricotta cheese
- 1 cup shredded mozzarella
- 1/4 cup grated Parmesan
- Fresh basil (optional)
Instructions
- Heat olive oil in a large soup pot over medium heat. Add ground beef and/or sausage and cook until browned, breaking it up with a spoon. Drain excess grease.
- Add diced onion to the pot and cook until softened. Stir in minced garlic and cook for 30 seconds until fragrant.
- Pour in crushed tomatoes and broth. Stir in Italian seasoning, salt, and pepper. Bring to a boil.
- Break lasagna noodles into bite-sized pieces and stir them into the soup. Reduce heat to a simmer and cook for 10-12 minutes, stirring occasionally, until pasta is tender.
- Stir in ricotta and Parmesan cheese until melted and creamy.
- Serve the soup in bowls and top with shredded mozzarella and fresh basil.
