  • 1 14-ounce can of diced tomatoes (including liquid)
  • Salt, to taste
  • Pepper, to taste
  • Paprika, to taste
  • Thyme, to taste
  • Pinch of red pepper flakes (optional)
  • 1 tablespoon of olive oil

Instructions

  1. Prep your veggies: Chop cabbage, slice carrots, dice onion, and mince garlic.
  2. Sauté the aromatics: Heat olive oil in a stockpot over medium heat. Add onion, celery, and garlic, and cook for 5 minutes until softened and fragrant.
  3. Add carrots and cabbage: Stir in carrots and cabbage, cooking for 5 minutes until cabbage starts to wilt.
  4. Add liquid and seasonings: Pour in broth and diced tomatoes (with liquid). Add thyme, paprika, salt, pepper, and red pepper flakes. Stir together.
  5. Simmer: Bring soup to a boil, then reduce heat to low. Cover and simmer for 25 minutes, stirring occasionally, until cabbage is tender.
  6. Adjust seasoning: Taste and add more salt, pepper, or paprika as needed.
  7. Serve: Ladle into bowls and enjoy.
