Description

  • 2 cups all-purpose flour (240g)
  • ¾ cup granulated sugar (150g)
  • ⅓ cup brown sugar (70g)
  • ½ cup unsalted butter, melted (115g)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ¼ cup milk (60ml)
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • ½ teaspoon salt
  • Cinnamon-sugar topping: 2 tablespoons butter, ¼ cup granulated sugar, 1 teaspoon cinnamon

Instructions

  1. Reduce the apple cider: Pour 1 cup (240ml) of apple cider into a small saucepan and bring it to a gentle boil over medium heat. Let it simmer until reduced to about ½ cup (120ml). Let it cool while you prep the rest.
  2. Preheat the oven: Preheat your oven to 350°F (175°C). Grease your 9×5-inch loaf pan generously with butter or cooking spray. Line it with parchment paper for extra ease.
  3. Mix the dry ingredients: In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Set aside.
  4. Combine the wet ingredients: In a larger bowl, mix the cooled apple cider reduction, melted butter, eggs, vanilla extract, and milk. Gradually add the granulated sugar and brown sugar, whisking until smooth.
  5. Combine wet and dry ingredients: Add the dry ingredients to the wet ingredients in 2 batches, mixing gently until just combined. Do not overmix.
  6. Pour and bake: Pour the batter into the prepared loaf pan and smooth the top with a spatula. Bake for 45-55 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
  7. Add the topping: Melt 2 tablespoons of butter and brush it over the warm loaf. Sprinkle the cinnamon-sugar mixture evenly on top. Let it cool for at least 15 minutes before slicing.
