- 1 ½ cups all-purpose flour
- ½ cup granulated sugar
- ½ cup brown sugar
- ½ cup butter, softened
- 1 large egg
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- ½ teaspoon salt
- 8 oz cream cheese, softened
- ¼ cup granulated sugar (for cheesecake filling)
- ¼ cup granulated sugar (for rolling)
- 1 tablespoon cinnamon
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, cream together ½ cup of softened butter, ½ cup of granulated sugar, and ½ cup of brown sugar until fluffy.
- Beat in 1 large egg and 1 teaspoon of vanilla extract until combined.
- In another bowl, whisk together 1 ½ cups of all-purpose flour, 1 teaspoon of baking powder, and ½ teaspoon of salt. Gradually add this to your wet mixture, mixing just until combined.
- In a separate bowl, mix together 8 oz of softened cream cheese, ¼ cup of granulated sugar, and 1 teaspoon of vanilla extract until smooth.
- Take a small amount of cookie dough (about 1 tablespoon) and flatten it in your palm. Place a teaspoon of the cheesecake filling in the center, then fold the dough around it to create a ball.
- In a bowl, mix ¼ cup of sugar with 1 tablespoon of cinnamon. Roll each cookie ball in this mixture before placing them on the prepared baking sheet, about 2 inches apart.
- Bake in the preheated oven for 12-15 minutes or until the edges are lightly golden.
- Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a cooling rack.
Notes
Chill the cookie dough for about 30 minutes before baking for thicker cookies.
