  • 2 cups unsweetened coconut flakes
  • 1 cup semi-sweet chocolate chips
  • 2 tablespoons unsalted butter
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line your 9×9-inch pan with parchment paper, letting it hang over the edges.
  3. In a mixing bowl, combine the coconut flakes, sweetened condensed milk, and vanilla extract. Stir until well combined.
  4. Pour the coconut mixture into the prepared pan, spreading it evenly with a spatula. Press it down firmly to create a solid base.
  5. Place the pan in the preheated oven and bake for about 20-25 minutes until the edges are golden brown and the center is firm.
  6. While the base is baking, melt the chocolate chips and butter in a microwave-safe bowl, stirring every 30 seconds until smooth.
  7. Once the base is baked, remove it from the oven and let it cool for a few minutes. Pour the melted chocolate over the coconut base, spreading it evenly.
  8. Allow the bars to cool at room temperature for about 30 minutes, then transfer them to the refrigerator to set for at least 2 hours.
  9. Once set, lift the bars out of the pan using the parchment paper. Cut them into squares or rectangles and enjoy!

Notes

Letting the base cool slightly before adding the chocolate helps create a nice layer without mixing. Chilling is key for the chocolate to harden properly.
