- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- ¼ cup granulated sugar
- 16 oz cream cheese, softened
- ½ cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 cup semi-sweet chocolate chips
Instructions
- Preheat your oven to 350°F (175°C).
- Line your 9×9 inch baking pan with parchment paper, leaving some overhang.
- In a medium bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Mix until well combined.
- Firmly press the crumb mixture into the bottom of the prepared pan. Bake for 8-10 minutes until lightly golden.
- In a large mixing bowl, beat softened cream cheese with an electric mixer until smooth. Gradually add granulated sugar and eggs, mixing well after each addition. Add vanilla extract and beat until fully combined.
- Gently fold in chocolate chips using a spatula.
- Spread the cheesecake mixture evenly over the pre-baked crust.
- Bake in the preheated oven for 30-35 minutes, or until the edges are set and the center is slightly jiggly.
- Let it cool at room temperature for about 30 minutes, then refrigerate for at least 2 hours.
- Once chilled, lift the bars out of the pan using the parchment paper, slice into squares, and serve.
Notes
Allowing the bars to cool gradually prevents cracks from forming. Store leftovers in an airtight container in the fridge for up to a week.
