A perfect fancy dinner featuring juicy chicken thighs marinated in a smoky chipotle and sweet honey sauce, paired with creamy smoked Gouda mashed potatoes.

- 6 bone-in, skin-on chicken thighs (about 2 pounds / 900g)
- 2 chipotle peppers in adobo sauce plus 1 tablespoon adobo sauce
- 2 tablespoons honey (40g)
- 4 cloves garlic, minced (about 2 teaspoons)
- 3 tablespoons olive oil (45ml)
- 1 cup shredded smoked Gouda cheese (115g)
- 2 pounds russet potatoes, peeled and chopped (900g)
- 4 tablespoons butter (60g)
- 1/2 cup heavy cream (120ml)
- Salt and pepper to taste
- Fresh parsley, chopped (optional, for garnish)
Instructions
- Marinate the chicken: In a large bowl, combine minced garlic, chopped chipotle peppers, adobo sauce, honey, olive oil, salt, and pepper. Toss chicken thighs in the marinade, coating well. Cover and refrigerate for at least 30 minutes or overnight.
- Prepare mashed potatoes: Peel and chop russet potatoes. Place in a pot of cold salted water and bring to a boil. Cook until fork-tender, about 15-20 minutes. Drain and return to pot over low heat for 2 minutes to evaporate moisture.
- Add butter, heavy cream, and shredded smoked Gouda to the potatoes. Mash until creamy but slightly textured. Season with salt and pepper to taste.
- Sear and roast chicken: Heat cast iron skillet over medium-high heat and add 1 tablespoon olive oil. Place chicken thighs skin-side down and sear until skin is golden and crispy, about 5-7 minutes.
- Flip chicken thighs and transfer skillet to preheated oven at 400°F (200°C). Roast for 15-20 minutes until internal temperature reaches 165°F (74°C).
- Plate and garnish: Serve chicken thighs over a scoop of smoked Gouda mashed potatoes. Sprinkle chopped fresh parsley on top and drizzle a little extra honey if desired.
Notes
Pat chicken dry before marinating to ensure crispy skin. Do not skip oven roasting after searing for even cooking. Use smoked Gouda for best flavor in mashed potatoes. Let chicken rest 5 minutes after roasting. Adjust chipotle and honey to taste for spice level. Mashed potatoes can be made with sweet potatoes as a variation.
