These cheesy keto Philly cheesesteak roll ups are a low-carb twist on the classic sandwich, featuring savory beef, sautéed peppers and onions, and gooey melted cheese wrapped in a keto-friendly tortilla.

- 1 lb thinly sliced beef (ribeye, sirloin, or pre-sliced steak)
- 6 slices provolone cheese
- 2 bell peppers, thinly sliced (red, green, or yellow)
- 1 onion, thinly sliced (sweet or yellow)
- 6 low-carb tortillas
- 2 tbsp butter or olive oil
- Salt and pepper to taste
- Optional: garlic powder, Worcestershire sauce, hot sauce
Instructions
- Thinly slice the beef, bell peppers, and onions. Set everything out so it’s ready to go.
- Heat 1 tablespoon of butter or oil in a skillet over medium heat. Add the sliced peppers and onions, season with a pinch of salt and pepper, and cook until softened and slightly caramelized (about 5-7 minutes). Remove from the skillet and set aside.
- In the same skillet, add another tablespoon of butter or oil. Increase the heat to medium-high and add the sliced beef. Season with salt and pepper, and cook for 3-5 minutes until browned and cooked through. Stir in any optional seasonings like garlic powder or Worcestershire sauce. Set aside.
- Lay out a low-carb tortilla and place a slice of provolone cheese on top. Add a scoop of cooked beef and a spoonful of the sautéed veggies. Roll it up tightly, tucking in the sides as you go.
- Wipe out your skillet and place the roll ups seam-side down. Cook over medium heat for about 2-3 minutes per side, until the tortilla is golden and the cheese is melted.
