Description

This Cheesy Bean and Rice Burrito is a delicious, budget-friendly meal that’s packed with flavor. Made with creamy refried beans, fluffy rice, melty cheese, and a zesty jalapeño sauce, this burrito is both satisfying and easy to customize. Whether you’re recreating Taco Bell’s version or making your own twist, this recipe is simple, quick, and perfect for meal prep!

Ingredients

Scale
  • 1 cup refried beans
  • 1 cup cooked rice (white or Mexican-style)
  • 1 cup shredded cheese (cheddar, Monterey Jack, or a blend)
  • ½ cup creamy jalapeño sauce (or sour cream with taco seasoning)
  • 4 large flour tortillas
  • 1 teaspoon olive oil
  • 1 teaspoon taco seasoning
  • 56 slices pickled jalapeños (optional)
  • ¼ cup diced tomatoes (optional)

Instructions

  1. Prepare the Rice: Cook the rice according to package instructions. For extra flavor, mix it with taco seasoning.
  2. Heat the Beans: Warm the refried beans in a saucepan over low heat, stirring occasionally.
  3. Make the Cheese Sauce: If using shredded cheese, mix it with the creamy jalapeño sauce in a bowl.
  4. Assemble the Burrito: Lay a tortilla flat. Spread ¼ cup of refried beans, followed by ¼ cup of rice, ¼ cup of cheese sauce, and any optional toppings.
  5. Roll the Burrito: Fold the sides inward, then roll the burrito tightly from bottom to top.
  6. Toast the Burrito (Optional): Heat a skillet over medium heat, brush with olive oil, and toast each burrito for 1-2 minutes per side until golden brown.
  7. Serve & Enjoy: Slice in half and serve warm with salsa, guacamole, or sour cream.

Notes

  • Add grilled chicken or steak for extra protein.
  • Swap refried beans for black beans for a different texture.
  • Use whole wheat tortillas for a healthier option.
  • Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in a skillet or microwave.
