- 1 cup (225g) unsalted butter, melted
- 2 cups (400g) granulated sugar
- 4 large eggs, room temperature
- 1 teaspoon vanilla extract
- 1 cup (125g) all-purpose flour
- 1 cup (90g) unsweetened cocoa powder
- 1/2 teaspoon salt
- 16 oz (450g) cream cheese, softened
- 1 cup (120g) powdered sugar
- 2 large eggs, room temperature
- 1 teaspoon vanilla extract
- 1 cup (240ml) heavy cream
- 8 oz (225g) semi-sweet chocolate, chopped
Instructions
- Preheat your oven to 350°F (175°C). Grease and line the bottom of a 9-inch springform pan with parchment paper.
- In a mixing bowl, combine the melted butter and granulated sugar. Mix until well combined. Add the eggs and vanilla extract; beat until smooth. Sift in the flour, cocoa powder, and salt. Stir until just combined. Pour half of the brownie batter into the prepared pan, spreading it evenly.
- In another bowl, beat the softened cream cheese with powdered sugar until creamy. Add the eggs and vanilla extract, mixing until smooth. Pour the cheesecake mixture over the brownie layer in the pan.
- Carefully spoon the remaining brownie batter over the cheesecake layer. Use a knife to gently swirl the two layers together for a marbled effect—don’t overdo it!
- Place the cake in the preheated oven and bake for 45-50 minutes or until the center is set but still slightly jiggly. Remove from the oven and let it cool in the pan for about 30 minutes, then refrigerate for at least 4 hours or overnight.
- When you’re ready to serve, heat the heavy cream in a small saucepan until it just begins to simmer. Pour it over the chopped chocolate in a bowl and let it sit for a few minutes. Stir until smooth and glossy.
- Release the springform pan and remove the sides. Pour the ganache over the top of the chilled cake, allowing it to drip down the sides. You can decorate with fresh berries, if desired!
- Slice and serve chilled or at room temperature. Enjoy!
