Ingredients
- 1 cup (250g) Biscoff cookie butter (smooth, not crunchy)
- 1/2 cup (115g) unsalted butter, softened
- 3/4 cup (150g) light brown sugar
- 1/4 cup (50g) granulated sugar
- 1 large egg, room temperature
- 1 1/4 cups (160g) all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon (optional)
- Optional add-ins: 1/2 cup chopped pecans or walnuts, or 1/2 cup dark chocolate chips
Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone mat.
- Soften butter to room temperature if not already soft.
- In a large bowl, beat together softened butter, Biscoff cookie butter, brown sugar, and granulated sugar with an electric mixer until creamy and smooth, about 2-3 minutes.
- Add the egg and vanilla extract, mixing until fully incorporated.
- In a separate bowl, whisk together flour, baking soda, salt, and cinnamon (if using).
- Gradually add dry ingredients to wet mixture, mixing on low speed or folding with a spatula until no flour streaks remain. Do not overmix.
- Using a cookie scoop or spoon, drop rounded tablespoons of dough onto the prepared baking sheet, spacing about 2 inches apart.
- Bake for 10-12 minutes until edges look set but centers are slightly underbaked for a chewy texture.
- Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
- Serve warm with tea, coffee, or milk.
