Description
This decadent dessert is easy to make and promises to be a crowd-pleaser with its rich and creamy layers infused with Biscoff cookie butter.

- 2 cups all-purpose flour
- 1 ½ teaspoons baking powder
- Pinch of salt
- ½ cup unsalted butter
- 1 cup granulated sugar
- 3 large eggs
- 1 cup Biscoff cookie butter
- ½ cup milk
- 8 oz cream cheese
- ½ cup Biscoff cookie butter (for frosting)
- 2 cups powdered sugar
Instructions
- Preheat your oven to 350°F (175°C) and grease your cake pans with butter or cooking spray.
- In a large bowl, whisk together 2 cups of all-purpose flour, 1 ½ teaspoons of baking powder, and a pinch of salt. Set aside.
- In another bowl, beat together ½ cup of unsalted butter and 1 cup of granulated sugar until light and fluffy—about 3-4 minutes.
- Mix in 3 large eggs, one at a time, ensuring each is fully incorporated before adding the next.
- Add 1 cup of Biscoff cookie butter to the mixture and beat until combined.
- Gradually add the dry ingredients to the wet mixture, alternating with ½ cup of milk. Start and end with flour. Mix until just combined—don’t overmix!
- Divide the batter evenly between the two prepared pans.
- Bake in the preheated oven for 25-30 minutes or until a toothpick inserted in the center comes out clean.
- Once baked, let the cakes cool in the pans for 10 minutes, then transfer to a cooling rack to cool completely.
- In a mixing bowl, beat together 8 oz of cream cheese, ½ cup of Biscoff cookie butter, and 2 cups of powdered sugar until smooth and fluffy.
- Once the cakes are completely cool, place one layer on a serving plate, spread a layer of frosting on top, then place the second layer on top. Frost the top and sides of the cake.
- For an extra special touch, crumble some Biscoff cookies on top of the frosting!
Notes
Store any leftovers in the fridge; they keep well for a few days. For a lighter version, replace half the butter with applesauce.
