Description

This decadent dessert is easy to make and promises to be a crowd-pleaser with its rich and creamy layers infused with Biscoff cookie butter.


Ingredients

  • 2 cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • Pinch of salt
  • ½ cup unsalted butter
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 cup Biscoff cookie butter
  • ½ cup milk
  • 8 oz cream cheese
  • ½ cup Biscoff cookie butter (for frosting)
  • 2 cups powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your cake pans with butter or cooking spray.
  2. In a large bowl, whisk together 2 cups of all-purpose flour, 1 ½ teaspoons of baking powder, and a pinch of salt. Set aside.
  3. In another bowl, beat together ½ cup of unsalted butter and 1 cup of granulated sugar until light and fluffy—about 3-4 minutes.
  4. Mix in 3 large eggs, one at a time, ensuring each is fully incorporated before adding the next.
  5. Add 1 cup of Biscoff cookie butter to the mixture and beat until combined.
  6. Gradually add the dry ingredients to the wet mixture, alternating with ½ cup of milk. Start and end with flour. Mix until just combined—don’t overmix!
  7. Divide the batter evenly between the two prepared pans.
  8. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  9. Once baked, let the cakes cool in the pans for 10 minutes, then transfer to a cooling rack to cool completely.
  10. In a mixing bowl, beat together 8 oz of cream cheese, ½ cup of Biscoff cookie butter, and 2 cups of powdered sugar until smooth and fluffy.
  11. Once the cakes are completely cool, place one layer on a serving plate, spread a layer of frosting on top, then place the second layer on top. Frost the top and sides of the cake.
  12. For an extra special touch, crumble some Biscoff cookies on top of the frosting!

Notes

Store any leftovers in the fridge; they keep well for a few days. For a lighter version, replace half the butter with applesauce.
