Ingredients

  • 1 cup (120g) all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 cup (115g) unsalted butter
  • 1 cup (200g) granulated sugar
  • 2 large eggs
  • Zest of 1 lemon
  • Juice of 2 lemons (about 1/4 cup or 60ml)
  • Pinch of salt
  • 1 cup (120g) powdered sugar (for glaze)
  • 2 tablespoons lemon juice (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper, letting some overhang for easy removal.
  2. In a mixing bowl, melt 1/2 cup (115g) of unsalted butter in the microwave or on the stovetop until just melted.
  3. Add 1 cup (200g) of granulated sugar to the melted butter and whisk until combined.
  4. Incorporate 2 large eggs, one at a time, mixing well after each addition. Then, add the zest of 1 lemon and the juice of 2 lemons (about 1/4 cup or 60ml) into the mixture.
  5. In a separate bowl, whisk together 1 cup (120g) of all-purpose flour, 1 teaspoon of baking powder, and a pinch of salt.
  6. Gradually fold the dry ingredients into the wet mixture using a spatula until just combined. Be careful not to overmix!
  7. Pour the batter into the prepared baking pan and smooth the top with the spatula.
  8. Bake for 20-25 minutes or until the edges are golden and a toothpick inserted into the center comes out clean.
  9. Allow the brownies to cool in the pan for about 10 minutes, then lift them out using the parchment paper. Let them cool completely on a wire rack.
  10. To make the glaze, whisk together 1 cup (120g) of powdered sugar and 2 tablespoons of lemon juice until smooth. Drizzle over the cooled brownies.

Notes

Make sure your butter isn’t too hot when adding the sugar to avoid cooking the eggs. Mix just until combined to maintain a chewy texture.
