Ingredients

  • 1 pound ground beef (80/20)
  • 4 medium-sized potatoes (Russets or Yukon Golds)
  • 1 can (10.5 oz) cream of mushroom soup
  • 2 cups shredded cheddar cheese
  • ½ cup milk
  • 1 medium onion, diced
  • 2 tablespoons butter
  • Salt and pepper to taste
  • Optional: sliced mushrooms, frozen peas or green beans, crushed crackers or breadcrumbs for topping

Instructions

  1. Preheat the oven to 375°F (190°C). Grease a 9×13-inch baking dish with butter or cooking spray.
  2. Peel and thinly slice the potatoes into rounds, keeping them uniform for even cooking.
  3. Heat a large skillet over medium heat. Add the ground beef and cook until browned, breaking it up as it cooks. Drain excess grease and set aside.
  4. In the same skillet, melt the butter and add the diced onion. Cook for 2-3 minutes until softened.
  5. In a mixing bowl, combine the cream of mushroom soup, milk, and season with salt and pepper. Stir until smooth.
  6. Layer the casserole: Start with a layer of sliced potatoes in the bottom of the dish. Spread half the ground beef over the potatoes, followed by half the sautéed onions. Pour half the sauce over the top and sprinkle with half the shredded cheese. Repeat the layers until all ingredients are used.
  7. Cover the dish with foil and bake for 45 minutes. Then, remove the foil and bake for another 15 minutes, or until the cheese is bubbly and golden brown.
  8. Let the casserole cool for 5-10 minutes before serving.
