- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon cinnamon
- 1 pinch salt
- 1 cup milk
- 1 large egg
- 1 tablespoon melted butter or coconut oil
- 2 medium-sized apples (about 1 cup), chopped
- 1 cup powdered sugar
- 2 tablespoons milk or apple cider (for glaze)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, whisk together the flour, baking powder, cinnamon, and salt.
- In another bowl, mix the milk, egg, and melted butter or coconut oil until well combined.
- Chop the apples into small pieces and fold them into the dry ingredients.
- Pour the wet ingredients into the dry mixture and stir until just combined.
- Using a spoon or ice cream scoop, drop heaping tablespoons of the batter onto the prepared baking sheet, spacing them a few inches apart.
- Bake for 15-20 minutes, or until the fritters are golden brown and a toothpick inserted into the center comes out clean.
- While they bake, prepare the glaze by mixing the powdered sugar with milk or apple cider until smooth.
- Once the fritters are done, let them cool on a wire rack for about 5 minutes before drizzling with the glaze.
- Serve warm and enjoy!
Notes
For a vegan version, use a flax egg instead of a regular egg. Adjust the glaze consistency by adding more sugar or liquid as needed.
