Ingredients

  • 1 ¾ cups (220g) all-purpose flour
  • 1 ½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 cup (240g) Greek yogurt (full-fat or 2%)
  • 2 large eggs (room temperature)
  • ¼ cup (60g) unsalted butter, melted
  • ½ cup (100g) brown sugar
  • ¼ cup (50g) granulated sugar
  • 1 tsp vanilla extract
  • 2 medium apples, peeled and diced (Honeycrisp or Granny Smith recommended)
  • 1 tsp cinnamon

Instructions

  1. Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or lightly grease with cooking spray.
  2. Peel and dice the apples into small, bite-sized pieces. Set aside.
  3. In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt.
  4. In a large bowl, whisk together the Greek yogurt, melted butter (cooled slightly), eggs, brown sugar, granulated sugar, and vanilla extract until smooth and creamy.
  5. Slowly add the dry ingredients to the wet ingredients, folding gently with a spatula until no streaks of flour remain.
  6. Gently fold the diced apples into the batter.
  7. Divide the batter evenly among the muffin cups, filling each about ¾ full.
  8. Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
