  • 2 medium apples, peeled and diced (about 2 cups)
  • 1/4 cup brown sugar
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
  • 2 tablespoons butter, melted (plus more for brushing)
  • 1 teaspoon lemon juice
  • 1/2 teaspoon vanilla extract (optional)
  • Pinch of salt
  • Optional: Caramel sauce, whipped cream, or ice cream for serving
  • For cinnamon sugar finish: 1 tablespoon sugar + 1/2 teaspoon cinnamon

Instructions

  1. Peel and dice apples into small cubes (about 1/4-inch). Toss in a mixing bowl with brown sugar, granulated sugar, cinnamon, melted butter, lemon juice, vanilla, and a pinch of salt until coated.
  2. If apples are very firm, microwave for 1 minute or sauté for 2-3 minutes in a small saucepan to soften.
  3. Stack tortillas and wrap in a damp paper towel. Microwave for 20 seconds until warm and pliable.
  4. Spoon 2-3 tablespoons of apple filling along one edge of each tortilla. Roll up tightly, tucking in the sides, and place seam-side down.
  5. Melt remaining butter and brush over each taquito, focusing on the seam to seal.
  6. Place taquitos seam-side down in air fryer basket, leaving space between each. Air fry at 375°F for 8-10 minutes, flipping halfway, until golden brown and bubbling at the edges.
  7. Immediately after air frying, sprinkle with cinnamon sugar mixture for a sweet crust.
  8. Let cool for 2-3 minutes before serving. Serve warm with caramel sauce, whipped cream, or ice cream if desired.

Notes

Don’t overfill taquitos to prevent leaking. Warm tortillas before rolling to avoid cracking. Seal edges with butter for crispiness. Flip halfway for even browning. Sprinkle with cinnamon sugar after air frying for a churro-like finish. For vegan, use coconut oil and vegan tortillas.
